MONTEREY CHICKEN 
Croissants (1 for each person)
Cubed chicken, cooked (2 c. chicken is enough for 6)
Avocado, sliced (2 slices per serving)
Tomato slices (2 per serving)
Monterey Jack cheese, thinly sliced
Hollandaise sauce

Slice each croissant in half. Open and place on cookie sheet. Spread with a slight amount of mayonnaise if desired. Next comes the tomato slices with one on each side of the roll. Place avocado slices on each side of roll. Arrange a few pieces of chicken as much or as little as you like, on each roll. Top with slices of cheese.

Bake for a few minutes to melt cheese. Top with Hollandaise sauce for a yummy quick dinner.
