PECAN PRALINES | |
1/8 tsp. salt 2 1/2 c. granulated sugar 2 c. brown sugar 3 tbsp. white corn syrup 2 tsp. maple or vanilla flavor 1 1/4 c. bottled milk or 10 tbsp. canned milk and 10 tbsp. water 2 c. pecans Combine sugar, syrup, salt and milk. Cook gently, stir almost constantly until soft ball is formed in cold water. Remove from heat, cool to lukewarm. Beat until mixture begins to thicken; add flavoring and pecans. Drop quickly from teaspoons. When firm, wrap in wax paper. Will keep well. If candy hardens too fast, add a little milk at a time and rewarm a little. |
