BEEF RANCHERO 
1 lb. ground beef
1 sm. chopped onion
1 lb. can cream style corn
1/4 c. prepared barbecue sauce
1/2 tsp. salt
1 env. (5 servings) instant potatoes
1/4 c. cubed cheese
1 tbsp. prepared mustard

Brown ground beef and onion in a large skillet, drain excess fat. Stir in corn, barbecue sauce and salt. Heat to boiling. Spoon into 1 1/2 quart casserole. Prepare instant potatoes as directed on package. Stir in cheese cubes and mustard. Spoon potatoes around edge of casserole. If you wish, sprinkle with additional cheese. Bake at 400 degrees for 20 minutes.
