HUMMINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
3 eggs
1 c. oil
1 1/2 tsp. vanilla
1 can (8 oz.) crushed pineapple and juice
2 c. chopped bananas
1 c. flaked coconut

Combine all dry ingredients in bowl. Crush chopped bananas and pineapple in the blender if desired, then add eggs, oil, vanilla and coconut to dry ingredients.

Mix well then spoon into greased and floured tube pan. Bake in 300 degree oven 1 hour and 15 minutes. Let cool in pan 10 minutes before removing from pan.

CREAM CHEESE ICING:

8 oz. cream cheese
1/2 c. butter
1 box (1 lb.) powdered sugar
1 tsp. vanilla
1 c. chopped nuts
