HOT POTATO SALAD WITH SAUSAGE 
Preparation time: 25 minutes. Serves: 4.

8 boiling potatoes
4 slices bacon, diced
6 tbsp. chopped onion
1/2 lb. cooked Kielbasa or other smoked sausage, sliced

DRESSING:

1/2 c. wine vinegar
1/2 c. beef broth
1/4 c. minced parsley or chopped chives
Sour cream (opt.)

1. scrub potatoes. Boil in lightly salted water. Cook until tender, about 20 minutes. Do not over cook. Drain.

2. Fry bacon until soft and cooked, not crisp. Add onion. Cook a few minutes until soft. Remove from heat.

3. Simmer the sausage slices in a small amount of water for 4 minutes. Drain.

4. Peel potatoes. Slice into thin rounds. Put in serving bowl. Place sausage slices over potatoes.

5. Gently reheat bacon and onion in pan. Add mixture of vinegar and broth.

6. Bring to a boil. Pour hot over potatoes and sausage. Sprinkle with parsley.

7. Serve with a dollop of sour cream, if desired.

Good served with: Green beans and corn-on-the-cob, crusty rolls and iced tea or cold beer, if desired.

HEALTH NOTE: To reduce fat, cholesterol and calories, omit bacon.
