APRICOT NUT LOAF 
3/4 c. dried apricots
Lukewarm water
1 orange
1/2 c. raisins
Boiling water
2/3 c. sugar
2 tbsp. butter, melted
1 egg
2 c. flour
2 tsp. baking powder
1 tsp. each salt & baking soda
1/2 c. chopped walnuts
1 tsp. vanilla

Preheat oven to 350 degrees. Lightly grease a loaf pan. In a bowl, cover apricots with lukewarm water and let stand for 30 minutes; drain. Using a vegetable peeler, remove zest (thin colored part of peel) from only half the orange. Cut orange in half and squeeze all the juice from both halves. Force apricots, orange zest and raisins through a food grinder or finely chop with a knife. Add enough boiling water to orange juice to make 1 cup and pour into a bowl along with the ground fruit. Stir in sugar and butter; beat in egg. In a separate bowl, stir together flour, baking powder, salt, baking soda and walnuts; add to fruit mixture along with vanilla and stir just until all flour is moistened. Pour into prepared pan. Bake 55 to 60 minutes.
