PORK CHOPS WITH DRESSING 
6 pork chops
1/2 c. finely chopped onion
1/2 c. chopped celery
1 1/2 c. bread crumbs
2 tbsp. pork fat
1/8 tsp. black pepper
3/4 tsp. salt
3/4 c. hot water
1 egg, beaten

Mix bread crumbs, pork fat, salt, pepper, onion, celery, water and egg. Put pork chops in pan close together. Add a little water to cover bottom of pan. Pour the bread mixture over pork chops, spreading evenly. Bake in a moderate hot oven for 1 hour, basting occasionally.
