MARINATED CAULIFLOWER SALAD 
2 heads cauliflower
1 green pepper, diced
1 red pepper, diced
1 onion, sliced
2 1/2 c. vinegar
1 1/2 c. sugar
1 1/2 c. water
3 tbsp. salt
Pickling spice

Cut up cauliflower into bite size pieces. Cook cauliflower 3-5 minutes in salted water in covered pot. Do not overcook. Cauliflower should be slightly crunchy.

Combine cauliflower, peppers and onions in large glass bowl. Place vinegar, sugar, water, salt and pickling spice in a pot and bring to a boil. Cool. Pour marinade over vegetables. Refrigerate overnight. Serves 8.
