HOT POTATO CASSEROLE 
10 Idaho potatoes cooked
1 green pepper diced
parsley
1/2 lb. Velveeta cheese diced
1 slice fresh bread chopped fine
1 tbsp. milk
1 large onion diced
1 small jar pimento
1 c. corn flakes
1 c. butter melted
salt to taste

Moisten bread with milk. Then mix all the ingredients together and place in 9 by 13 inch casserole pan. Crumble corn flakes for topping.

Bake at 350°F for one hour. Great with ham or pork roast!
