BLACK BEAN AND ROASTED PEPPER
SALAD
 
3 cans black beans (15 oz.) drained and rinsed well
1 batch roasted peppers (1 lb.)
Cilantro dressing

CILANTRO DRESSING:

1/2 c. rice vinegar
1 tbsp. sugar
1/4 c. olive oil
1 tbsp. honey
1/2 tsp. chili oil
1/4 c. fresh cilantro
2 tbsp. green onion

Mix beans, peppers and dressing. Serve at room temperature.
