CRISPY OVEN POTATOES 
1/4 c. melted butter
1 tbsp. grated onion
1 tbsp. chopped parsley, optional
1/2 tsp. dried thyme
1/2 tsp. salt
1/8 tsp. pepper
4 lg. unpeeled potatoes
1 1/2 c. shredded cheese

Slice potatoes 1/4-1/2 inch thick. Combine first 6 ingredients. Layer potatoes in a lightly greased baking dish, brushing each layer with butter mixture. Bake at 350-400 degrees for 40 minutes or until potatoes are tender. Sprinkle with cheese. Bake 5 more minutes or until cheese melts. Yields 6 servings.
