GRANDMA'S ITALIAN CHEESE GNOCCHI 
1 lb. Ricotta cheese
Flour enough to fill the Ricotta container
1 egg
Pinch of salt

Mix all ingredients. Let stand for 15 minutes. Roll into strips using hands and floured surface, about as thick as your thumb. Cut one-inch pieces. Drop into boiling water and cook until they rise to surface, about 10 minutes. Serve with spaghetti sauce and grated cheese.
