SLICED BAKED POTATOES 
4 med. baking potatoes
1 tsp. salt
2 to 3 tbsp. melted butter
2 to 3 tbsp. chopped fresh herbs such as parsley, chives, thyme or sage
4 tbsp. grated cheese (cheddar)
1 1/2 tbsp. Parmesan cheese
2 to 3 tsp. dried herbs may be used in place of fresh herbs

Peel potatoes if skin is tough, if not scrub and rinse well. Cut potatoes into slices fan style, not all the way through. (Use a handle of a wooden spoon to prevent knife from cutting all the way through the potato.) Place potato in baking dish, fan slightly. Sprinkle with salt and drizzle with butter. Sprinkle with herbs.

Bake at 425 degrees for 50 minutes. Remove from oven and sprinkle with cheese. Bake potatoes another 10 to 15 minutes until slightly brown and cheese is melted. Check with fork to see if centers of potatoes are done.

MICROWAVE METHOD: Place potatoes in a microwave dish and cook at high power for 10 minutes. Re-arrange after 5 minutes. Let rest for 5 minutes. Sprinkle with cheese and herbs and cook at high power for additional 5 to 6 minutes. Sprinkle with salt.

Since microwave ovens vary in power, you may need to adjust your cooking time.
