HERBED BEEF ROLADES 
1/2 c. chopped celery
1/2 green bell pepper
4 tbsp. butter
1 1/2 c. dry stuffing mix (12 oz.)
6 cube steaks
2 tbsp. shortening
1 env. onion soup mix
16 oz. can or 1 lb. fresh wax or green beans
16 oz. stewed tomatoes
1 tbsp. flour
Cotton string (feed sack string is good)

Saute celery and bell pepper in butter. When they become transparent, set aside. Roll each steak with 1/4 cup dry stuffing mix inside and tie with clean cotton string. Brown in hot shortening.

In large skillet heat soup mix and 1 1/2 cups water. Add beans, tomatoes, celery, peppers and steak rolls. Cook until tender. Remove meat and vegetables from liquid. To liquid, add 1 tablespoon flour to make gravy.
