CHINESE LEMON CHICKEN 
1/2 c. fresh lemon juice
1 tbsp. lime juice
1 1/2 tbsp. walnut oil
1 1/2 tbsp. low sodium soy sauce
2 tsp. Dijon mustard
Dash of cayenne
1 lb. skinless chicken breasts
4 lemon wedges

Combine lemon and lime juice, oil, soy, mustard, and cayenne. Marinate chicken breasts in this for 4 hours or more in a cool place. Cut chicken breasts in 4 pieces and poach in the marinade in a saucepan until tender, about 10 minutes.
