PEANUT BUTTER BRAN MUFFINS 
1 c. all purpose flour
1/3 c. brown sugar, packed
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 egg, beaten
1 c. milk
3 tbsp. vegetable oil
1 c. bran cereal
1/3 c. chunky peanut butter
2 tbsp. honey

Preheat oven to 400 degrees. Grease 12 to 15 muffin pan cups. In medium bowl combine flour, brown sugar, baking powder, salt and baking soda. In small bowl blend together egg, milk and oil; stir in bran and let stand 5 minutes. Add peanut butter and honey; mix until well combined. Stir into flour mixture just until blended. Do not overmix.

Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Remove from pan to wire rack to cool. Makes 12 to 15 muffins.
