PEANUT BUTTER MUFFINS 
1 3/4 c. flour
1/2 c. sugar
1 tbsp. baking powder
1 egg
3/4 c. milk
1/2 c. peanut butter
1/3 c. salad oil
1/2 c. raisins - optional

Preheat oven to 400 degrees. Grease 12 - 2 1/2 inch muffin pan cups.

In large bowl with fork, mix flour, sugar and baking powder. In medium bowl, beat milk, peanut butter, salad oil and egg until smooth. Stir peanut-butter mixture into flour mixture just until moistened (batter should be lumpy). Stir in raisins.

Spoon batter into prepared muffin cups, filling each about 2/3 full. Bake 20 minutes or until well risen and golden. Toothpick inserted in center comes out clean and dry. Makes 12 muffins.
