CAJUN STEW 
1 fryer cut up or 2 lbs. cut up pork or 2 lbs. meatballs
1 med. onion, chopped
1/2 c. bell pepper, chopped
2 lg. potatoes, cut up
1 1/2 qt. water
5 tbsp. roux

Add roux, onions, and bell pepper to water and boil. Stir constantly until roux is completely dissolved. Season your meat and add, also add your potatoes. Cook on medium heat until meat is tender. Stir occasionally to avoid sticking. Serve over rice.
