CHICKEN WITH RICE CASSEROLE 
2 1/2 - 3 lb. fryer
1 tbsp. salt
1 tsp. pepper
1/2 c. butter
2 tbsp. onions
1 1/4 c. uncooked rice
1 c. chicken broth

Cut chicken into frying pieces; season. Brown in butter in skillet. Remove meat and add onions and brown. Drain off excess. Place rice in large casserole. Place chicken and onions on top. Pour broth over all. Cover and seal well with foil. Place casserole lid on top of foil. Bake at 350 degrees for 1 hour.
