SENOR BILLY'S GUACAMOLE 
SENOR BILLY'S GUACAMOLE #1:

1 large avocado
1/2 fresh green sweet pepper with seeds removed, finely chopped
1 med. red onion, finely chopped
2 jalapeno chili peppers with seeds removed, finely chopped
juice from 1/2 lime (lemon may be substituted for lime)
shredded head lettuce
ground white pepper
salt
1/4 cup chopped fresh cilantro (1 tbsp. dried cilantro may be substituted)
1 large sliced tomato

Quarter the avocado and remove the seed and peeling. Mash the avocado quarters with either a potato masher or fork and stir in the chopped onion and peppers. Add the cilantro, salt and pepper to taste and mix all the ingredients with a fork until an even texture is obtained. Let the mixture set for about 15 minutes. The flavor of the jalapeno pepper seems to be enhanced and becomes spicier as it reacts to the other ingredients.

Serve with the shredded lettuce and tomato. You may wish to add the sliced tomato to the mixture just before serving. If you add the tomato too early, the juice from the tomato tends to break up the other ingredients.

SENOR BILLY'S GUACAMOLE #2:

Follow #1 recipe except you may use either white or red onions and add 1/3 cup each of salad dressing and sour cream to final mixture. Add skinned, chopped tomatoes and add as a topping for the shredded lettuce.

Serving suggestion: Chill in refrigerator 1 hour before serving.
