MEXICAN BRUNCH 
8 oz. Monterey Jack cheese, shredded
8 oz. cheddar cheese, shredded
4 oz. can mild Ortega chilies, chopped
5 eggs
1/2 c. milk
Salt and pepper
1 c. salsa

Layer 1/2 cheeses in a 9 or 10 inch glass baking dish. Top with chilies, then remaining cheese. Beat eggs and milk and pour over cheese. Salt and pepper to taste. Bake at 350 degrees for 45 minutes. Cover top with salsa and bake for 15 minutes more. Serves 4 to 6. Great with muffins and fresh fruit. Can also be doubled and baked in a 9 x 13 inch baking dish.
