CHOCOLATE NUT FILLED CAKE 
Substitute for unsweetened chocolate: 3 tablespoons cocoa, 1/2 teaspoon shortening equals 1 ounce.

1. 3 c. flour
2. 1/2 c. sugar
3. 3/8 c. juice (orange)
4. 2 sticks butter
5. 4 egg yolks
6. 2 tsp. baking powder
4 egg whites
1 c. sugar

Mix first 6 ingredients and set aside. Beat egg whites and gradually add sugar - fold into batter.

FILLING:

1 tsp. vanilla
2 grated apples
1/2 c. chopped nuts
2 oz. bitter chocolate, melted
Juice - rind of 1 lemon

Mix filling ingredients. Place 1/2 batter in a 9 x 13 inch pan. Pour filling over batter and cover with remaining half. Bake at 350 degrees for 45 minutes or a bit longer until tested and done. Sprinkle with confectioners' sugar when cool to cut.
