WHITE CHILI | |
1 lb. white beans (soaked overnight or cans of white beans) 6 c. chicken broth 2 cloves garlic 1/2 c. chopped onion 4 chicken breasts, cooked and cubed 1/2 tsp. oregano 1 tsp. cumin 2 cans chopped green chilies 1/2 c. chopped onion Drain white beans. Add chicken broth, garlic and onions. Cook until tender. Add remaining ingredients. Cook and simmer for 30 minutes to 1 hour. Serve with guacamole, chopped tomatoes, onions, sour cream, tortilla chips or cornbread. Yield: 5 servings. |
