EGG AND TOMATO 
3 ripe tomatoes
Chopped onion
Salt & pepper
Sweet basil
6 eggs
1 - 1/1/2 tbsp. oil

Cook cut up tomatoes thoroughly, mash and strain. Return pulp to pan; add onion, sweet basil, salt and pepper to taste. Simmer until thickened. Add oil. Beat eggs in bowl. Add eggs to sauce mixture and cook until dry. Serve as main dish or side dish.
