CREOLE JAMBOLIA 
1 med. onion, chopped
1 pod minced garlic
1 tsp. minced parsley
1/2 tsp. thyme
1 lb. chopped ham, cooked
1/2 lb. hot sausage
2 c. water
1 c. uncooked rice
Salt and pepper to taste

Saute the sausage, onions, garlic, parsley and thyme in large skillet. Add ham. Cook a few minutes. Add water. Bring to a boil. Wash rice and add. Cover and simmer until rice is done and nearly dry. About 30 minutes. I usually have to add more water.
