SWISS GREEN BEANS 
1 lb. can drained whole (Blue Lake) green beans
2 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/4 tsp. white pepper
1 c. thick sour cream
1 tsp. prepared mustard
1/2 c. (2 oz.) grated Swiss cheese
1/2 c. fine dry bread crumbs
1 tbsp. grated onion

Grease small baking dish. Heat 2 tablespoons butter in saucepan. Blend in mixture of flour, salt, and pepper. Heat until mixture bubbles, stirring constantly.

Remove from heat. Add sour cream and mustard. Gradually heat, but do not boil. Heat 1 tablespoon butter in small skillet. Mix bread crumbs in and stir frequently. Set crumbs aside.
