SAVORY CHEESE TOPPED FISH
FILLETS
 
2 lbs. white fleshed fish fillets
3 tbsp. butter
1/4 lb. mushrooms, thinly sliced
2 tbsp. green onion, minced
3/4 tsp. salt
1/2 tsp. basil
1/4 tsp. lemon pepper
1 tomato, chopped
1 c. Cheddar cheese, shredded
1 egg, beaten

Poach fish; remove any bones; break into small pieces. Place in casserole dish. Melt butter in frying pan. Add mushroom and green onion. Cook, stirring, until liquid evaporates. Remove from heat. Stir in salt, basil, lemon pepper, tomato, cheese, and egg. Spoon evenly over the top of fish. Cook 5 inches away from a pre-heated broiler until cheese melts. Serves 6.
