CZECH LIGHT CRUMB CAKE WITH
FRESH FRUIT
 
3 c. Wondra flour
1 1/2 c. sugar
2 whole eggs, well beaten
4 oz. sweet butter
3 tsp. baking powder

First grease a large baking sheet (with sides). In the bowl mix flour, sugar, baking powder and eggs. Add softened (room temperature) cut up butter and with hands make crumbs. Spread little more than 1/2 of crumbs onto the baking sheet. Now place a fruit of your choice on top of the crumb bottom. The best ones are raspberries, blueberries, peaches or Italian plums. (Remove pits from these and cut up fruit in smaller pieces.) Sprinkle with a little cinnamon. Add a little sugar when using raspberries. Sprinkle the rest of crumbs on top and place in preheated 350 degree oven for 35 to 40 minutes. Crumbs should be golden (light). Take out of the oven and slice cake while hot into little squares. Serve cool. Yum Yum!
