1/2 c. fine bread crumbs 1/4 c. grated Parmesan cheese 1/2 tsp. basil or oregano 1 beaten egg 3 tbsp. butter 1 (8 oz.) can tomato sauce 1 c. medium chop whole tomatoes 1/4 c. water 1/8 tsp. crushed red pepper 1 c. (4 oz.) shredded Mozzarella cheese 4 chicken breasts Combine first 3 ingredients. Dip chicken in egg and then into crumb mix. Preheat electric skillet to 350°F and melt butter in skillet. Cook chicken breasts about 3 minutes on each side. Combine tomato sauce, tomatoes and water. Pour over chicken. Reduce heat to 220°F; cover and cook 25 to 30 minutes or until chicken is tender. Sprinkle Mozzarella cheese over top; cover and cook until cheese melts. |
