CHERRIES IN THE SNOW 
3 egg whites
1 c. sugar
1 c. chopped nuts
1 tub Cool Whip
1/2 tbsp. cream of tartar
1 1/2 c. broken soda crackers
1 tsp. vanilla extract
1 can cherry pie filling

Butter a 9 x 13-inch glass pan. Beat egg whites and cream of tartar, adding sugar a little at a time, until stiff peaks form. Add vanilla, nuts and crushed soda crackers. Mix well. Place into pan and bake at 350°F for 30 minutes. Cool. Add Cool Whip making high peaks, and then add the cherries. Refrigerate any leftovers.

Makes 8 large servings.
