CREAM OF BROCCOLI SOUP 
1/2 c. flour
8 c. milk, cow's or soy
1/2 c. vegetable oil
1/4 c. Maggi seasoning
2 c. (1 lb.) mashed tofu
1 (16 oz.) bag frozen chopped broccoli
1 med. onion, diced

Gradually blend milk into flour. Add oil and Maggi seasoning. Heat in large pot until bubbly. Puree the mashed tofu in a blender until smooth. Add to the soup. Cook broccoli and drain off liquid. Chop into tiny pieces with food processor. Add broccoli and onions to soup. Simmer briefly over low/medium heat. Serve. Rewarm on low heat only.
