3 c. sifted flour 4 tsp. double-acting or 5 tsp. fast-acting baking powder 1 tsp. salt 2 tsp. sugar 2/3 c. melted butter 2 c. milk 4 eggs, separated When using an electric mixer, beat the egg yolks 1 minute, using No. 8 speed; add the milk, and beat for about 1 minute longer. Add the sifted dry ingredients to this mixture at No. 4 speed, and beat for a minute longer at No. 8 speed. Add the melted shortening, and beat for 15 seconds at No. 8 speed, or until the mixture is thoroughly blended. Fold in stiffly beaten egg whites at No. 1 speed. When mixing by hand, sift and mix dry ingredients, adding melted butter. Next add milk gradually alternately with beaten egg yolks. Then fold stiffly beaten egg whites into the first mixture. Use 14 oz. (1 3/4 8 oz. measuring cups) of batter to fill grids once. Pour batter in center of grids and spread evenly to all four corners. 3-4 section waffles. |
