COCONUT CREAM PIE 
1 c. sugar
1/2 tsp. salt
2 c. milk
2 tbsp. butter
1 baked 9" pie crust
3 1/2 tbsp. cornstarch
1 c. coconut
3 eggs, separated
1 tsp. vanilla

Mix together 2/3 cup sugar and cornstarch and salt, gradually stir in milk and cook over low heat for 10 minutes, stirring constantly until mixture thickens.

Stir small amounts into slightly beaten egg yolks, then gradually pour into thickened milk and cook for about 2 minutes, stirring constantly. Add butter and vanilla and 1/2 cup coconut; stir well.

Pour into baked pie crust. Beat the 3 egg whites to make meringue. Add the remaining 1/3 cup sugar to meringue. Sprinkle the top with the other half of coconut, then brown top. Chill.
