CHEESY-CORN MUFFINS | |
6 oz. self-rising cornmeal mix 3 eggs, beaten 6 oz. Cheddar cheese, grated 1 1/2 c. skim milk Preheat oven to 350 degrees. Spray muffin pan with a nonstick cooking spray. Combine all ingredients. Mixture will be lumpy. Divide evenly into 12 muffin tins. Bake for 20-25 minutes. Remove from pan and place on a wire rack to cool. One serving equals three muffins. |
