SPINACH - CHEESE CASSEROLE 
2 lbs. cottage cheese
1 (10 oz.) pkg. spinach, chopped and thawed
1/2 lb. monterey jack cheese
1/2 lb. cheddar cheese
1 stick butter
6 tbsp. flour
6 eggs, beaten

Cut cheese into cubes and toss with flour. Mix eggs, cottage cheese and spinach. Stir in cheese and butter. Put into 9 x 13 dish which has been buttered. Bake at 350 degrees for 45 minutes or until bubbly and brown.
