IRISH POTATO CANDY 
1 med. size Irish potato
2 boxes 4x powdered sugar
18 oz. jar peanut butter (you won't use all of this

Boil potato in skin until soft. Peel and mash thoroughly. Mix in powdered sugar until mixture is dough like. Roll this out on wax paper. Sprinkle with powdered sugar. Roll thin. Spread generous layer of peanut butter over this. Roll up, jelly roll fashion. Slice 3/8 inch thick and place on platter. Store in refrigerator.
