STUFFED SHELLS 
1 pkg. big shells
2 lbs. Ricotta cheese
1/2 lb. grated Mozzarella cheese
2 eggs
1/2 c. grated Parmesan cheese
1 pkg. frozen spinach, cooked, minced (squeeze to drain well)
About 1 qt. spaghetti sauce
1/2 tsp. nutmeg (very important)
Salt and pepper

Mix Ricotta, Mozzarella, eggs, Parmesan and spinach, nutmeg, salt, and pepper. Parboil shells 8 to 10 minutes (big shells). Drain and cool to handling stage. Fill shells. Cover bottom of baking dish with sauce. Place filled shells in single layer. Cover with sauce. Bake 30 minutes. Sprinkle with grated cheese.
