PINEAPPLE UPSIDE DOWN CAKE | |
3 tbsp. butter 3 tbsp. brown sugar or brown sugar substitute 4-5 pineapple slices 3/4 c. sifted cake flour 1 tsp. baking powder 1/4 tsp. salt 3 egg yolks 1/2 c. sugar or 1/4 c. sugar and sugar substitute equivalent for 1/4 c. sugar, suitable for baking 1/4 c. boiling water 1/2 tsp. vanilla Whipped cream, if desired Melt butter in 8 inch skillet or deep, round cake pan. Stir in brown sugar and spread evenly over bottom of pan. Place pineapple slices over butter and brown sugar. Set aside. Prepare batter by sifting together flour, baking powder and salt. In a bowl beat egg yolks until thick and light. Gradually add sugar and beat until well blended. Add hot water and flavoring. Blend well. Add flour mixture, a little at a time; blend well. Spread batter over prepared pineapple mixture. Bake in a 350 degree oven for about 35 minutes. When done turn upside down on a serving plate. Serve warm, with whipped cream, if desired. |
