STUFFED CUTLETS 
3 veal cutlets (get a butcher to cut them paper thin)
Salt & pepper
Gruyere cheese, sliced thin
Flour
1 egg
1 c. milk
Corn flakes
Spicy canned tomato sauce, spiked with 1 tsp. oregano

Salt and pepper the cutlets. Cut into 3" pieces. Make a sandwich by placing a slice of cheese between 2 pieces of veal. Dip the veal sandwiches in flour. Beat egg, add milk to it and beat again. Crush corn flakes. Dip floured sandwiches into the egg milk mixture, then in flour again. Lastly, cover with corn flakes. Fry in deep fat and serve with tomato sauce. Serves 6.
