Preheat oven to 375 degrees. Place 1/4 cup butter in an 8 inch or 9 inch iron skillet. Place skillet in oven to melt butter while you mix bread. (allow butter to brown slightly) DRY INGREDIENTS: 1 c. yellow cornmeal 1 c. flour 1/2 tsp. salt 1 tsp. baking powder (Mix together and set aside) WET INGREDIENTS: 1 1/4 c. buttermilk 1/4 tsp. baking soda 1 egg 2 tsp. sugar 1/4 c. corn oil Dissolve soda in buttermilk, whisk together the other wet ingredients, add buttermilk and soda. When skillet is hot and butter melted quickly mix dry and wet ingredients together. Scrape batter into hot skillet. Bake 25 to 30 minutes or until golden brown. |
