SPINACH SALAD FLAMBE 
1 lb. spinach (fresh)
4-6 strips bacon, cut up
1/8 c. vinegar
Worcestershire sauce
1/4 c. olive oil
Tarragon
2 hard cooked eggs
1/4 c. bacon dressing
1/8 c. lemon juice
Brandy
2 tsp. sugar
Salt and pepper

Tear spinach into bite size pieces and place in bowl. Add eggs and salt and pepper.

Heat remaining ingredients except brandy until very hot. Pour brandy into mixture and quickly heat and then ignite, shaking until burned out. Pour over spinach. Toss and serve immediately.
