SWEETBREADS EPICURE 
1 c. prepared white sauce
1 tbsp. minced pimento
1 pinch each - rosemary, thyme, marjoram
2 tbsp. minced parsley
Sm. handful slivered toasted almonds
1 pair cooked sweetbreads
1 tbsp. white wine

White sauce should be rich. Combine with first four ingredients and add sweetbreads which have been cleaned and broken into small pieces. Add wine, stir well and serve either in patty shells or on crisp toast triangles.
