COWBOY STEW 
4 med. potatoes, sliced
3-4 carrots, sliced
1 green pepper, sliced
1 med. onion, sliced
3 stalks celery, sliced
Salt & pepper to taste
1 lb. ground beef
1 (10 oz.) can tomato soup or 8 oz. can tomato sauce

Arrange vegetables in layers, beginning with potatoes, in a 2 quart casserole. Add salt and pepper to each layer. Season meat and press out to form a cover over vegetables. Pour tomato sauce/soup over meat. Bake, covered, at 350 degrees for 1 hour and 30 minutes. 4-6 servings.

Hint: If possible it is better to chop carrots, green pepper, onion and celery together and spread over potatoes.
