1 c. chopped tomato
1 c. chopped zucchini
1/2 c. chopped onion
1/3 c. grated Parmesan cheese
1 c. milk
2 eggs
1/2 c. Bisquick baking mix
1/4 tsp. pepper
1/2 tsp. salt (optional)

Heat oven to 400 degrees. Grease pie plate 9 x 1 1/4 inches. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand mixer. Pour into plate. Bake until knife inserted in center comes out clean, about 35 minutes. Cool 5 minutes. Garnish with tomato slices. You can add 1 cup cooked cut up chicken or ham with the vegetables in the first step.
