EGGPLANT PARMESAN 
1 eggplant
Oil
Italian bread crumbs
Egg & milk mixed together
Mozzarella cheese
Favorite red sauce (Italian)

Remove the skin from eggplant and slice thin. Dip in a mixture of egg and milk and coat with bread crumbs. Fry in oil. In a baking pan, place a layer of sauce, breaded eggplant, and Mozzarella cheese and more sauce; make stacks of three layers. Tastes great on a roll.
