THE GREATEST BUFFALO CHICKEN
WING SAUCE
 
This recipe is one of a kind. Ever since I ventured into making my own kind of chicken wing sauce, my wife, my friends and my family won't stop coming over to have some of this delicious finger-licking good special sauce. And here's how you make it.

2 cups dry cayenne peppers (50 grams)
1/2 cup water
1/3 cup chopped onion
1 chopped garlic
1/3 cup chopped tomato
1/2 cup white vinegar
1/2 cup (1 stick) butter
1 bottle Louisiana Hot Sauce
1/2 of the juice of 1 lemon
1 teaspoon honey
1/4 cup ketchup

Start by roasting the cayenne peppers on a pan over a medium high flame. Toss them around inside the pan for a couple of minutes and make sure you don't let these get burned. Add enough water to cover the peppers and bring water to a boil. Let them cook for ten minutes. Drain water and place them in blender. Add 1/2 cup of water, 1/2 cup of vinegar and salt. Blend on high and allow to percolate.

Place butter stick on a pan over a medium flame so that it melts. Add onion, garlic, tomato and the whole bottle of Louisiana Hot Sauce.

Let all cook for about five minutes, stirring occasionally. Immediately pour into blender and add the percolated cayenne pepper sauce. Blend on high for two minutes. Add the lemon juice, honey and ketchup, and blend again for a few seconds. Pour back into the pan where you melted the butter, and let it simmer for a good 20 minutes.

What I usually do, is fry the chicken wings until they’re golden brown and very crispy and then I dip each one into the sauce. My wife and I love these with celery sticks and Ranch dressing.

Ppl plz stop being so darn petty!!! This is a GREAT SAUCE!!!! Wow, I'm def keeping this as my signature go to wing recipe, everyone loved it and I will be making it again for the superbowl!! Also gonna do some deepfried chix tenders for "boneless wings"...I also prefer ranch...come on, it's a good recipe even if it's not "authenic"...THANK YOU SO MUCH MR. DIAZ!!!!!!!!!!!!!!!

I use dry ranch dressing in the franks sauce, dip them,then bake them. The dry ranch dressing helps the sauce stick to wings and gives them extra flavor.

I live in Australia and have never seen dry cayenne peppers....can I substitute with cayenne pepper powder or maybe jalapeno peppers from a jar ?? Fell in love with Buffalo wings about 15 years ago when an All Stars restaurant opened here in Melbourne, would love to find a recipe that is close to that one. Thanks.

This sauce is Da Bomb! Thank you, Mr. Diaz for sharing. Frankly, (pun intended) I think Frank's, or Texas Pete for that matter, is for wimps. I've been looking for a wing sauce recipe with some cojones and now I've found it. As for you Yankees, if you can't stand the heat, get out of the kitchen.

I was born and raised in Buffalo. Every time I get back to visit family it is a must to have wings-usually La Nova (barbecue), Barbill or Big Tree Inn. It's hard to go wrong with any type of sauce you can think up but true Buffalo "wings" are made simply with Frank's, Butter and a little vinegar.

This sauce recipe is actually pretty good. Franks STINKS so stop with the praise! There are at least a dozen better sauces including this one. I get that if you are "from buffalo" Frank's is the preference. Just like if you are from Louisiana you like Tabasco and Trappeys or in Texas you like Texas Pete's! All are better than franks' by the way. Kroger brand is better than Frank's! And blue cheese or ranch is a preference. Anyone that points that out is a goober! rate the recipe people and stop pointing out the history of Buffalo wings. Yep someone in Buffalo invented them w butter, hot sauce and vinegar! it has been improved on im sure!

Awesome sauce!!! I have made several batches and varied them slightly. Instead of jalapenos,for your guests who like heat,use Habaneros. Depending on my mood I use more or less hot sauce.You can add the same amount of jalapenos and to cut the heat add more butter.I worked in a restaurant where we used Texas Pete and butter for our wings.

Nobody that lives outside of Buffalo should tell others what hot sauce to use!!!! Use FRANKS and real butter, it is the only way to do it. If you can't get franks at you local store try to buy it online. (No I don't work for Franks) (I just use it) "I put that s#!t on everything" Wing maker and eater in Buffalo NY

I put hot sauce on almost everything. And hot wings are my favorite food, i eat them about 4 times a week... Frank's is basic, they make nothing special, and I almost never use their sauce.... Crystal Louisiana hot sauce is the best in my opinion.. Mix it with some cornstarch and butter and u can whip up my favorite buffalo sauce in about a minute... To the people who live by Frank's... You should experiment more... Frank's sucks..
