ROASTED GARLIC 
4 whole heads of garlic
1 tbsp. olive oil
Salt and pepper
1 tbsp. Parmesan cheese
Crisp crackers or sliced baguette bread

Slice the top half-inch from 4 whole heads of garlic. Remove some of the papery skins from the outside, keeping the head intact. Place in oven-proof baking dish, drizzle each with 1 tablespoon olive oil and sprinkle lightly with salt and pepper. Cover and bake 1 hour in a 275 degree oven. Uncover, baste with the oil in the dish, and sprinkle each with 1 tablespoon grated Parmesan cheese. Cover and bake 1 hour or more until tender. Serve warm by squeezing garlic cloves out of their skins onto crisp crackers or sliced baguette bread and spreading with a knife. Serves 4-6.
