CREAM GRAVY 
3 tbsp. fat from meat or pan drippings
3-4 tbsp. all purpose flour
2 c. milk or cream

Leave the fat in the skillet. Add the flour and cook, stirring constantly, until well browned. Add milk or cream and continue stirring over heat until it comes to a boil and gets thick. Add salt and pepper to taste if desired. Serves 4.
