GRANDMA'S DANISH COFFEE CAKE
4 c. sifted flour
1 tsp. salt
1 c. shortening or butter
3 tbsp. sugar
3 egg yolks, beaten (save whites)
1 c. lukewarm water
1/2 pkg. dry yeast, dissolved in 1/4 c. lukewarm water
1 tsp. sugar
1 c. sugar

Mix flour, salt, shortening and 3 tablespoons sugar like pie dough; set aside. Combine yolks, warm water, yeast dissolved in warm water and 1 teaspoon sugar; add to above mixture a little at a time. Refrigerate dough overnight. Divide dough into 4 equal parts; beat egg whites until stiff adding 1 cup sugar and beat (mixture will be smooth and shiny). Roll dough as for pie in oblong shape about 1/8 inch thick. Sprinkle with raisins, nuts, cherries, dates or candied fruit in whatever combination your family likes. Roll like a jelly roll and pinch over ends. Place on a cookie sheet and flatten. Cover with waxed paper. Raise 3 hours. Bake at 350 degrees for 25 to 30 minutes. When cool drizzle with powdered sugar glaze over the top of rolls.
