GINGERBREAD COOKIES 
4 c. all-purpose flour
2 tsp. ginger
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. cloves
1/4 tsp. salt
3/4 c. shortening
1 c. packed brown sugar
1 egg
1/2 c. molasses
2 tbsp. vinegar

Mix together first six ingredients. In large, mixing bowl beat shortening on medium speed for 30 seconds. Add brown sugar, beat until fluffy. Add egg, molasses and vinegar; beat well. Gradually add flour mixture blending well. Chill about 3 hours. Roll dough to 1/8 inch thickness. Cut with cookie cutters. Bake at 375 degrees for 5 minutes.
